I’m Back!

So I’ve been really quiet for a little (long) while. Not to make excuses but being a single mam with a full time job doesn’t leave much spare time. But on top of that I’ve been launching my new business.

Let’s have a catch up.

My last blog was back in January where I set myself 4 goals. Let’s see how I’m getting on with them.

  1. Get organised.

Well I must say I think I am a little more organised. But how organised can one be with a toddler destroying the house every second? Since being back at work full time (January) I have had to make more of an effort to be organised and I feel like I’m starting to get a good routine going for myself that fits around Arthur’s routine.

2. Loose weight.

Haha. So I stopped going to Slimming World to save myself some time. I said to myself, “I know what I need to do, I can just do it myself.” This obviously didn’t work. I’ve been running now and then (more then than now) but I’m almost back to the weight I was when I started Slimming World the first time. Whoops!

3. Take more care in my appearance.

Well I could argue this. I went on holiday to France so before I went I got my hair done (first time since before I had Arthur), eye lashes (semi permanent by my friend down the street), and eye brows waxed (went to a posh spa and they burnt my eyelids and ripped quite a bit of skin off, hopefully it won’t scar). I’m using the eyelashes as an excuse not to wear makeup. So I am taking more care, I just need to keep on top of it now.

4. Socialise more.

Well this hasn’t happened. Full time work, single mam, business start up. Need I say more? Although I did meet a friend for dinner last week. She lives 5 minutes away and it’s the first time I’d seen her since Christmas.


Did anyone else set themselves goals this year? I’d love to know how you are getting on with them! There’s still time to make a change. Or at least that’s what I keep telling myself.


I’ve got loads planned for this blog. I want to share my new business, family meal ideas, updates on Arthur, things to do with an almost 2 year old and general single mum life.

Food for an (almost) 1 year old!

If you’ve seen my Vlogs you will have seen me making a few different things for Arthur and I. So I thought I’d share some of my favourite recipes for food that you can give to a 1 year old. Snacks aside (because lets face it, what adult wants to eat broccoli cake) I enjoy these meals as well. I don’t have enough time to make separate meals for everyone.

So number 1 you will have seen me make in Sunday’s Vlog. It’s the Chicken, Bacon and Leek Risotto. This is a Slimming World recipe so it’s syn free and it’s Arthur’s absolute favourite! He literally ate two portions in one sitting on Sunday.

Serves 4 adults

What you need:

1.75 litres of boiling low sodium chicken stock (in my Vlog you will have seen that I was cooking a joint of ham in the slow cooker so I used the stock from that)

Fry Light

8 bacon rashes with the fat cut off and roughly chopped

2 large or 3 medium sized leeks chopped up

300f dried risotto rice

4 chicken breasts (or 5 skinless and boneless thighs), cooked and chopped/shredded

a pinch of saffron



Pour the stock into a saucepan and keep on a low-medium heat.

Spray a large non-stick frying pan with fry light and place on a high heat. Add the bacon and fry until cooked. Remove the bacon from the pan with a slotted spoon and set aside. Spray the same pan with a touch more fry light and add the leeks. Cook for about 5 minutes until they are soft.

Add the rice and stir in with the leeks for about 1 minute. Add chicken and saffron, stir and turn heat down to medium. Add stock one spoonful at a time. Stir often and as soon as the rice has absorbed the liquid add another spoonful. Continue this until rive is fully cooked. It should take around 25minutes.

Add bacon and give it a good stir.

For the adults you can add some salt but I find that it doesn’t really need any.



Next up one of Arthur favourite snacks. Broccoli muffins.


This recipe makes approx 12 mini muffins. I use standard fairy cake cases rather than muffin cases and they are suitable to freeze.

What you need:

150g self-raising flour

1/2 tsp baking powder

2 broccoli florets, cooked and finely chopped

2tbsp of grated cheddar cheese

50g butter, melted and cooled

125ml whole milk

1 egg, lightly beaten



Heat oven to 170degrees C fan (190 normal)

Sieve together flour and baking powder, then stir in the broccoli and cheese.

Beat together the butter, milk and egg and then add it to the flour mixture. Stir until combined.

Spoon into approx. 12 cake cases and bake for about 10-12 minutes. They will rise and be golden brown when cooked.

Slimming World

Happy Friday everyone! I hope you all have a lovely weekend planned.

I just wanted to write a quick blog about Slimming World. After having Arthur last November I struggled to loose my baby weight. Then my mam died in March and I put on even more weight and found myself heavier than I have ever been. 14stone 6lbs.

I decided to do a cleanse and I lost 8lbs in 9 days but I obviously wanted to loose a lot more than that so on 22nd June I went along to my local Slimming World group.

I was greeted with the warmest welcome anyone could wish for. I wasn’t nervous about going but I can understand a lot of people are and they are made to feel instantly at ease the second they walk through the door. I sat through the new member talk, paid my £9.95 membership (each week after is £4.95) and went off to get weighed. Everyone is weighed at the beginning of each group and nobody else gets to know your weight so it’s very confidential.

The plan takes a little getting your head around but I have to say I LOVE IT! You can eat absolutely all sorts of things including carbs and let’s face it, carbs are our friend. In the first 3 weeks I lost 8.5lbs. WOW!

Now, since I have started I have had quite a few naughty weeks. I’ve had a hen night, a wedding, a two week holiday, a baby shower (involving more cake) my sisters birthday (I made a massive cake) and my birthday. But to date I have lost 1.5 stone which I think is pretty incredible as I don’t feel like I am actually dieting.

My top tips:

  1. Plan your meals before you do the weekly food shop. Write a shopping list based on your meal plan and stick to it. Not only do you have no naughty temptations at home but you also save money. I bought the ‘Free Food Feasts’ book from my group and a lot of my meals come from that. A favourite is the Mighty Meatzza which is a pizza with a meat base instead of bread. It tastes so naughty but it’s what us Slimming Worlders call a SPEED meal.
  2. Take a friend. I’m sure we all have a friend who wants to loose a bit of weight. Taking a friend keeps you motivated.
  3. Stay to group. Don’t just get weighed and go home. Staying to the group really helps as you pick up lots of hints and tips and boosts your self confidence. You also meet lots of lovely people. It’s also my hour a week where I am me, not mam. My group is 7.30pm so I put Arthur to bed and my dad babysits.
  4. If you have a bad week still go and get weighed. We are all going to have weeks where we gain a little weight but by still going to the group you will get the motivation you need for the week ahead. Miss it and it’s more likely you’ll gain again the following week.
  5. Use your consultant. They are there to help and no question is stupid. You will have contact information so if you need help during the week pick up the phone or send a message. We also have a private Facebook group where lots of members post meal ideas.

Anyone thinking of joining Slimming World I would just say GO FOR IT! What have you got to loose apart from all of those lbs!!!
